A. food guardians--The 200 women of the U.S. Department of Agriculture's processed food inspection corps help insure good food for the armed forces by checking every lot of canned fruits and vegetables as well as frozen and dehydrated foods the U.S. government buys for servicemen. With this vast job to do in addition to their regular peacetime job of inspecting food for the civilian market, the inspectors are working in three shifts around the clock, day and night. The processed food inspectors are stationed at 50 laboratories across the U.S. Most of the women inspectors are home economists, some are chemists and bacteriologists. They come from 36 states and from 55 colleges and universities. In this picture, a food inspector compares the color of blended grapefruit and orange juice--in a flat, ping-pong bat-shaped glass flask--with shaded color plates in a dictionary of color.
